  1. Roast the Spaghetti Squash: Preheat your oven to 400°F. Slice the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle olive oil over each half and season with salt and pepper. Place cut-side down on a baking sheet and roast for 35-40 minutes until tender.
  2. Cook the Beef Marinara: Heat 1 tbsp olive oil in a large skillet over medium heat. Add ground beef and cook until browned (5-7 minutes). Drain excess grease if needed.
  3. Add diced onion and garlic to the skillet. Sauté for 3-5 minutes until onions are translucent.
  4. Stir in marinara sauce and Italian seasoning. Season with salt and pepper to taste. Simmer over low heat for 10-15 minutes, stirring occasionally.
  5. Assemble the Dish: Use a fork to shred the cooked spaghetti squash into strands. Divide among serving bowls.
  6. Top It Off: Spoon the beef marinara over the squash. Add torn mozzarella on top while the dish is still warm to let it melt slightly.
