Roasted Whole Chicken & Veggies

Ingredients
- (1) Ayers Valley Farm Whole Chicken
- (1 tbsp) Olive Oil or Butter
- (1 tsp) Salt
- (1/2 tsp) Pepper
- (1 tsp) Garlic Powder
- (1 tsp) Paprika
- (4) Carrots (chopped)
- (4) Potatoes (chopped)
- (1) Onion (quartered)
- Optional: Lemon + Fresh Herbs
Directions
- Preheat oven to 425°F.
- Pat chicken dry & rub with oil + spices.
- Place veggies around chicken on a baking sheet or roasting pan.
- Roast ~75 minutes or until internal temp reaches 165°F.
- Rest 10 minutes before carving.
- Save bones for broth!
