Roasted Whole Chicken & Veggies

Ingredients
  • (1) Ayers Valley Farm Whole Chicken
  • (1 tbsp) Olive Oil or Butter
  • (1 tsp) Salt
  • (1/2 tsp) Pepper
  • (1 tsp) Garlic Powder
  • (1 tsp) Paprika
  • (4) Carrots (chopped)
  • (4) Potatoes (chopped)
  • (1) Onion (quartered)
  • Optional: Lemon + Fresh Herbs
Directions
  1. Preheat oven to 425°F.
  2. Pat chicken dry & rub with oil + spices.
  3. Place veggies around chicken on a baking sheet or roasting pan.
  4. Roast ~75 minutes or until internal temp reaches 165°F.
  5. Rest 10 minutes before carving.
  6. Save bones for broth!
