Pork Sausage & Potato Soup

Ingredients
  • (1 lb) Ayers Valley Farm Mild Italian Pork Sausage
  • (1 tbsp) Olive Oil or Butter
  • (1) Yellow Onion (Minced)
  • (2) Garlic Cloves (Minced)
  • (4-5) Medium Potatoes (Diced)
  • (4 cups) Chicken Broth (homemade if possible)
  • (1 cup) Heavy Cream or Coconut Milk
  • (2 cups) Chopped Kale or Spinach
  • (1 tsp) Italian Seasoning
  • Salt and Pepper (to taste)
Directions
  1. Heat oil in a large pot and brown sausage, breaking it apart as it cooks.
  2. Add onions & garlic and sauté 2–3 minutes.
  3. Stir in potatoes, broth, and Italian seasoning.
  4. Bring to a boil, then reduce heat and simmer 20 minutes until potatoes are tender.
  5. Stir in cream and greens.
  6. Cook 3–5 more minutes, season to taste, and serve warm.
